Old Ebbitt Grill and The Hamilton
Old Ebbitt Grill is just steps from The White House in downtown Washington. Established in 1856, it was a favorite of Presidents Grant, Cleveland, Harding and Theodore Roosevelt and is still a popular meeting spot for political insiders, journalists, celebrities, and theater-goers. Its Beaux-Arts facade, mahogany, and velvet booths and bustling bars set in marble, brass and beveled glass are Washington at its finest, and The Oyster Bar at Old Ebbitt is D.C.'s most famous.
Designed to capture DC’s creative Renaissance and a food-savvy audience that draws influence from every corner of the planet, The Hamilton delivers a contemporary dining experience that’s as eclectic as the talent in our music hall – Hamilton Live. This uniquely designed, state-of-the-art venue is where the musician and audience come together for a warm, hip experience of entertainment and dining.
These two properties are among DC’s most iconic and America’s most successful with combined annual sales volume in excess of $57M. Sharing the same block between 14th and 15th, these two properties are truly the epicenter of energy and entertainment in downtown DC.



Responsibilities

The focus of the Beverage Director (BD) position is to drive all aspects of beverage selection, ordering, menu development, handling and training for two restaurants that have aggressive beverage programs and a well-established history of awards from Wine Spectator. The right candidate will bring with them a great background in beverage management, excellent strategic and menu development skills and a polished high energy communication style that plays towards both staff training and guest interaction. We are looking for a beverage leader, not a beverage manager and hope this position eventually grows into Corporate Beverage Director for all of CRG. The BD will report to the VP of Food and Beverage as well as both location General Managers. Key areas of focus and expectation for this position include:
• Research and continually develop our beverage market position to keep our beverage offerings fresh, exciting, and relevant for our guests while remaining true to the brand.
• Oversee all inventory and ordering for both properties and work with management and receiving to ensure pristine storage.
• Drive tight disciplines and controls to ensure all beverage cost centers are within budget.
• Obsess over staff training and coach both Servers and Bartenders to be the most knowledgeable in the city.
• Spend at least one dinner shift a week in each property working the floor, selling to guests and mentoring staff.
• While in some cases collaborating with the VP of Food and Beverage, select for and drive tight logistics on beer, liquor, and cocktail menu updates.
• Be a sharp ambassador of the restaurants at beverage related trade events.
• Whenever possible, collaboratively involve both management and hourly service teams in menu development and ideation.



Qualifications and requirements

The ideal candidate is a talented restaurant industry beverage professional who is obsessed with improvement, is a “pied piper” for change, and possesses the following qualities:
• A contagious passion for wine, beer, and spirits
• A GREAT sense of flavor
• Natural team building skills and a passion for coaching
• A true passion for food, wine, and culinary trends
• A genuine sense of hospitality and the desire to serve
• Polished and sharp dining room skills and sales ability
• 5 or more years of experience leading restaurant beverage in a polished casual or higher environment.
• “Certified Sommelier” or higher in the Court of Master Sommeliers
• The ability to lead in a high-stress environment without ever compromising the necessity to treat all team members with courtesy, dignity, and respect
• High energy with strong attention to detail
• Personal characteristics that include humility, business maturity, integrity, self-confidence, resilience, creativity, collaborative influencing style, and superior communication skills (both verbal and written)
• A great sense of humor
• High intellect, analytical capability, and acute business acumen
• Strong administrative skills that include Microsoft Word and Excel
